Story 4: The South, South East

Cactus Taco
Last dinner in New York had to be something I shouldn't eat in Europe

If an eggplant and a green pepper decided to have a baby, it would taste something like the cactus taco from Taqueria Lower East Side. I bit into it expecting the mean, the choky, the dueling images from old Western movies, but the cacti left my taste buds with more of a "Howdy Pard'ner" friendliness. It was like biting into a roasted pepper, one with a more smokey and charred flavor. A handful of cilantro and queso fresco melodied the cactus on a corn tortilla. I couldn't help but "tee-hee" and "mmmm" between bites.

Eat this now. Eat this immediately. Eat this forever!
